Yorkshire pudding is a classic British dish consisting of a savory popover-like batter baked to golden perfection. In this IBS-friendly version, we’ll be making modifications to ensure it’s gentle on the digestive system while still delivering the delicious taste and fluffy texture that Yorkshire pudding is known for.

gluten free plain flour 60 g

cornflour 60 g

lactose-free milk 150 ml

vegetable oil 6 tbsp
Instructions
- Preheat your oven to gas mark 9 or 245 degrees Celsius. Grease 6 muffin holes lightly with oil.
- Once the oven is heated, place the greased muffin tray inside and let it heat for 10 minutes.
- Meanwhile, in a food mixer or using an electric hand mixer, combine the flour, eggs, and milk until you achieve a smooth batter consistency.
- Carefully ladle or pour the batter into the preheated oiled muffin holes. Return the tray to the oven.
- Bake for 10 minutes initially, then reduce the oven temperature to gas mark 6 or 200 degrees Celsius and continue baking for another 10-15 minutes. Remember, resist the urge to open the oven door while they're baking!
